Hello my dear friends!
I'm so glad that my favorite season is here once again. Yeah, I'm talking about autumn with its new beginnings and fresh ideas, hot coffee and delicious cookies. As a child and student, I was in a hurry to meet my friends again after the long summer vacations. Now that I finished my Bachelor studies, it's the first time that I have no "back to school" preperation and studying, so there is only the funny part of it!
So here I am, working on my new project, that combines my two greatest loves: food and decoration. Since I was old enough to use the kitchen tools, I started experimenting and creating my own, unique recipes, with fresh ingredients and messy attitude!(yeah, that's why this blog name choice.) Cooking was always a passion that I shared with my family and friends only, but this time you can turn your glance at my messy world too.

Today i went to the grocery store and i bought a small pumpkin(because it's autumn DUH!) so i decided to make a simple yet tasty pumpkin pie, combined with some coconut flavored cream, for a most unique taste.

There is no doubt that coffee is here, keeping me alive during almost all day, so i prepared my large coffee mug and I started...
PUMPKIN PIE
(about 10 serves)
1 package of puff pastry
1 cup pumpkin, boiled and strained
1/ 2 cup brown sugar
1/2 cup coconut flakes
1 tablespoon cinnamon
1/2 tablespoon vanilla extract
a pinch of salt
coconut (or another kind of) oil for spreading
COCONUT CREAM
1/2 cup heavy cream
1/2 cup coconut yogurt
coconut flakes
1. After you cut, boil and strain the pumpkin, put it on a blender with sugar, salt, cinnamon, coconut flakes and vanilla extract.
2. Οpen the puff pastry packet and cover with half of it a medium sized pan. (I put some vegetable oil on the pan before use so there are no stick issues.)
3. Apply the pumpkin mix over the puff pastry and cover with the other half of the package.
4. Spread the top puff with some coconut oil and decorate with some coconut flakes and/or sugar.
5. Bake on 180 C for 50- 55 minutes or until the crust is golden enough.
6. After you take off the pie, let it chill for some minutes and prepare the coconut cream by blending the heavy cream and flakes until it's smooth. Then add the yogurt, in slow and gentle movements.
7. Serve the pumpkin pie with the cream, some more cinnamon and sugar on top..and bon appétit!!!
