Chocolate Cupcakes(with a vegan twist)



Today it's Saturday, aka My Favorite Day of the whole week. I just came back from my village and I'm home alone, which means limitless freedom bakings and messy kitchen! Ι drunk a cup of coffee, I cleaned up my bedroom and then went for a walk in a beautiful place in my city, with so many trees, peace (especially on weekend mornings!) and beauty.

When I went back home, my stomach was crawling for food so chocolate cupcakes came to my mind: they are super easy to make, they come to mini size which is the perfect trick for eating too many without guilts and they are ready in only 15 minutes! Oh, and they are made with chocolate so that's a success itself!

I forgot to mention the best sou chef in whole family history: Simba the cat. A friend gave me this little monster 4 years ago and now we are the perfect gang! Also, i have to admit that I almost have a vegetarian's and some weeks vegan's eating choices, since last year, because I don't find the meat industry really cool. So, I made a vegaν twist for this traditional recipe :) Sooo, here we go:


CHOCOLATE CUPCAKES
(for 10 little forms)
1/2 cup cocoa powder
3/4 cup whole grain flour(or all-purpose flour)
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup vegetable oil ( i put some coconut oil)
1 cup sugar
3 eggs (2 melted bananas for the vegans!)
1/2 cup yogurt
1 cup chocolate chips
1 teaspoon vanilla extract




1. You preheat the oven on 190 C.
2. You mix all the solid ingredients(cocoa, flour, sugar, b.p., salt, vanilla and chocolate chips) in a big bowl.
2. In another bowl, you blend the eggs (or bananas) with the yogurt and oil.
3.You pour the liquids into the solids and you mix until you have a smooth result.
4. You fill the 3/4 of around 10 cupcake forms and you bake for 15-20 minutes.

Decoration: I chose some different toppings,to test the results:
  • melted bitter chocolate with cookies
  • milk chocolate with dried coconut and 
  • -my favorite topping so far!- white chocolate mixed with special color for food et voilà!
