Ok, I'm "dessert is a must" kind of person, but you may already know that!
Chocolate is my thing. And especially dark chocolate (which is rich in iron, magnesium and antioxidants.) So, although I enjoy a plain, traditional cheesecake, most of the times I prepare it with a chocolate twist. Also,I prefer a fridge and not an oven version of it. It's more delicate and with a lighter taste.
After years of experiments, bithday cakes and flavor changes, i reached the level that I want: the best balance of fresh cream cheese and chocolate biscuits, not so full of fat and ready in about an hour!
Here is the recipe. I warn you: you will need a double dose. Amen.
TRIPLE CHOCOLATE CHEESECAKE
(for the crunchy base)
2 packs of chocolate cookies
1/2 cup melted butter
1/2 cup melted chocolate
(for the cream)
2 cups low fat cream cheese
1 cup strained yogurt 2%
2 spoons of sugar
vanilla extract
(for the chocolate magic top)
1/2 cup dark chocolate
1/2 cup white chocolate
some pieces of milk chocolate
1. Smash the cookies (ok, you can eat one or two..) with a blender.
2. Mix it with melted butter and chocolate and place it in a form, by making a flat base. Place it on fridge for 20 minutes.
3. Mix cream cheese, sugar, vanilla and yogurt until they reach a fluffy texture.
4. Place the cream mix over the cookie base, in a blended way.
5. Drop some melted white and dark chocolate on the top of cheesecake and with a knife start making swirls, until there is some amount of chocolate everywhere. Then put some pieces of milk chocolate. Place it on fridge for 1 hour and that's it!
*You can put some fresh fruits on top, like strawberries or peaches or bananas or you can serve it with some nuts and cookies. This cheesecake is sweet enough, so I wouldn't suggest any syrup or marmelade.
*It's got even better taste if you leave it longer on fridge and also if you let it 1-2 minute on room temperature before you eat it.
